For me, I'd say the Slip-Slide Galaxy. It only took me 10 minutes to beat! (Including the Cosmic Comet and the hidden star, but not including Purple Coins)
EDIT: Whoops, I forgot about bosses. Nevermind he Slip Slide thing, the easiest for me is Bowser Jr.'s Lava Reactor
EDIT AGAIN: Nevermind. The Final Boss was TOO easy for me.

Let's see...
Flipswitch, Good Egg, Beach Bowl, Buoy Base (sorta) Loopdeloop, Loopdeswoop, Matter Splatter, Jr.'s Robot Reactor, and...hmm...Sweet Sweet Galaxy.
My definition of "easy:" Can routinely beat it w/out dying once in the entire run-through (all stars, comets, etc).
I say routinely, because there is always the odd mess-up that may occur. |

Well I be gonna have t' say that while good egg lakced a challenge it be pretty scenic as a level 'n it offered some pretty promising music, gameplay 'n graphics for the rest a the game...However when ye have tto go back there later for the Luigi 'n Purple comet challenges I would have felt a littel miffed if I be'nt busy listening t' the orchistral musix  |

Oh yeah, I forgot about that one. That one is certainly the easiest. It's possible to die, though. When you see a campfire, jump on it, and you'll burn and lose health. Keep doing that and you die. |
