It kinda would make things unbalanced... People would have to spend 2x coins to kill someone or heal their MP or HP. The items in place already have their set balance, and this would mess up the economy.
Of course though, I like the idea. A system like this with more balance would be great.

Double Attack would let you kill somebody with Double HP at the same rate. Double Healing would let you heal somebody with Double Health at the same rate. It's more balanced than it looks like.

Oh yeah. I remembered that, but forgot to mention it in my post. If we have it so we get it only changed once, then all the people with double HP won't be able to heal without mass coin spending since they chose. If it was allowed to change anytime, everybody would be Double HP until they needed to attack someone or use MP, then change immediately back.
Oh yeah, it would also throw off the value of 1up Mushrooms, too.

What I wrote was covering both areas, changeable AND non-changeable.
