DKR was an epic game. I would love to see a modern sequel... like a Diddy Kong Racing equivalent of Super Mario Galaxy. But for multiplayer, I'd have to go with MK64 for it's simplicity and higher frame-rate.

If my my memory recalls right I think the karts controls were better on MK64 than on DKR and most of the time you had to unlock the 2 other vehicles anyways to use on any other stage so I'll go with MK64 too.
They did do that DKR remake on the DS.
MK games are always going to be the gold standard though. DK64 is fun, but MK is always going to be where the shit gets thrown down. Maybe not 64 in particular, but if we are going with N64 games I guess it's good enough.
