How does the day/night cycle work in World of Warcraft and other online RPGs?

Like are they faster than real life and the same for everyone? or are they set to your timezone (like Animal Crossing)

I believe WoW works according to the server time (As there are servers for each time zone); as for FFXI, if I remember correctly, the game uses its own day/night cycle (I think every few minutes is an hour or something like that).

Crump is correct. All of the WoW clocks, at least, operate according to the time zone of their specified server. Of course there are some MMOs that work on different time. Although it is not a MMO, Fallout is a great example of this as it's time moves very fast.

So in WoW, if you are close to the same time zone as the server, when you play at night IRL, it is night in the game? Do they have events happen at the same time for everyone?

Events usually have a minimum of a 24 hour span so everyone has a chance regardless of server. But yes, if you play at night in a server on your time zone it will be night in WoW.
